- Tis the Season for Salads -

Of course now that we have eaten everything in sight we look for ways to shed a few pounds before summer. Although I am not one for salads if you are looking for a great salad recipe for the family this one is simple.

7-Layer Salad
1 head of iceberg lettuce shredded
1/2 cup of finely chopped celery
1/2 cup of finely chopped green onion
8 oz. can of green peas (drained)
2 cups Miracle Whip Salad Dressing
4 ounces of sharp shredded cheddar cheese
8 slices of fried bacon (crumbled)

Once you have fried the bacon crisp, drain it and place it on paper towels to remove as much grease as possible. Shred the lettuce and spread in a layer on the bottom of a large salad bowl. Add a layer of celery. Then a layer of green onion. Then a layer of peas. Keep each layer separate, don't mix together. Spread mayonnaise in a layer on top of the peas. Sprinkle the cheddar cheese over the mayonnaise layer. Add the crumbled bacon on top. Cover and refrigerate overnight. You may add croutons if you like before serving. ~ Chef Wilkinson ~
