Radishes belong to the mustard family. They are also related to both broccoli and watercress. Most people think radishes only come in red variety but they are also available in white, black, purple, rose and lavender. A radish is more than 90% water yet it contains as much potassium as bananas and about half the absorbic acid of oranges. They are also an excellent source of Vitamin C, folate and magnesium. Radishes can be purchased either trimmed or with their greens still attached. When purchasing make sure they are firm. If the leaves are still attached they should be fresh and bright green. Discard the leaves once you get home with them, place them in a plastic bag and straight into the refrigerator. They should last approximately 1 week.
