Ingredients:
1 quart tomatoes, cubed
3 cups vegetable broth
½ stick butter
2 cups onions, chopped
1 cup carrots, chopped
1 cup celery, chopped
1 bunch of basil, coarsely chopped
Salt and pepper to taste

Directions: Sauté veggies in the butter then add in the
tomatoes, basil and broth and simmer for ten minutes. Remove from heat and cool
slightly. Then place the soup into a blender briefly leaving it a little
chunky. Place back into your pot and add your salt and pepper. Heat until
desired temperature. Place in bowl and garnish with 1” cubed home-made
croutons and serve. ~ Chef ~
